Okinawa Kokuto Black Sugar

Slow crafted sugar with notes of caramel, molasses, and ocean air. On the southern islands of Okinawa, sugarcane grows under strong sun and steady ocean winds. The mineral rich soil and humid climate produce cane with remarkable depth.

Here artisans craft kokuto, Japan’s traditional black sugar, using methods that have endured for centuries. Fresh cane juice is pressed and slowly simmered in open kettles until it thickens and crystallizes into dark, fragrant blocks. Nothing is stripped away. The minerals remain intact.

Unlike refined sugars, kokuto carries the full character of the cane. Its flavor unfolds slowly. Caramel. Toasted molasses. WA faint whisper of licorice.

The signature of kokuto is endurance. Sun, wind, and time concentrate the cane into something deeply sustaining. A sweetness that carries the strength of the island where it was grown.

PIEDMONT HAZELNUTS

In the hills of Alta Langa in Piedmont, part of a UNESCO World Heritage landscape, hazelnut groves unfold between vineyards and ancient forests, shaped by centuries of cultivation and care.

Here, limestone rich soil and cool alpine air create the precise conditions for the region’s most revered variety, Tonda Gentile Trilobata, an expression of place, time, and quiet mastery.

Our hazelnuts are sourced from growers working in partnership with Relanghe, in close connection with the famed winemaking family, the Ceretto family, whose legacy in the region reflects a deep respect for land, tradition, and craft.

BULGARIAN ROSE DAMASCENA

In the Valley of Roses in central Bulgaria, fields of Rosa damascena bloom for only a few short weeks each spring. Harvest begins before sunrise when the petals are cool and their oils are at their most concentrated.

Each blossom is picked by hand, gathered in woven baskets, and quickly distilled to preserve its delicate character. Thousands of petals are required to produce even a small amount of rose oil.

Its aroma is unmistakable. Soft. Luminous. A floral note that carries both sweetness and depth.
