Observe the strawberry. Its form resembles the human heart, not by accident alone, but by a remarkable echo found throughout nature. For centuries, strawberries have symbolized love, vitality, and renewal. Their crimson hue, delicate fragrance, and fleeting season remind us that some of life’s greatest pleasures are also its most precious.

We chose the Mara des Bois, a celebrated French variety renowned not for size or shelf life, but for its extraordinary perfume. A cross between woodland strawberries and cultivated French berries, it offers captivating notes of wild strawberry, rose petals, and summer forest. Its aroma is as memorable as its flavor, engaging the senses long before the first taste.

The strawberry’s tiny seeds rest upon its surface rather than hidden within, a quiet expression of openness. It reveals its potential without disguise, inviting us to do the same.

Beyond its beauty, the strawberry is naturally rich in vitamin C, anthocyanins, and polyphenols, plant compounds studied for their antioxidant properties and their role in supporting healthy circulation and protecting cells from oxidative stress. Combined with the naturally occurring flavanols found in fine estate chocolate, this pairing brings together two remarkable botanical ingredients that have been cherished for both pleasure and nourishment.

The Mara des Bois is harvested for only a brief moment each summer, making this confection an expression of seasonality, craftsmanship, and nature’s perfect timing.
