Our house made toffee begins with grass fed butter and a signature blend of Japanese black Kokuto sugar, a centuries old sugar prized for its mineral depth and leathered tobacco aromatics. Grown on a remote island with fewer than 600 inhabitants, the sugar is slowly caramelized in a copper kettle to develop its amber complexity.

The molten toffee is poured over a foundation of olive oil roasted, sea salted Marcona almonds, revered as the Queen of Almonds, alongside tart, plump cherries gently dried in their own juices without added sugar or oil. The result is a deep rustic toffee that cradles marconas and cherries, lightly dipped in 63% cacao dark chocolate and finished with the noble metal of gold to crown.
